Honey Products

All of our honey is raw, organic, honey that is never heated and is filtered only through cheese cloth so you get a great honey that has a fresh just-out-of-the-comb taste. If liquid honey crystallizes (turns solid), which happens to all honey that has been stored for a long time, place it in a pan of warm water until the honey is liquid again. Honey should be stored in a warm place.

 

Note that the honey marked with an asterisk (*) are tropical wild varieties, gathered in Florida. The others are gathered in New England.

 

Our honey is pure. Beware of "laundered" honey.

About Orange and Tangerine Blossom Honeys

Of the many prized honeys, none is more unique than Orange Blossom Honey. Florida orange groves blossom in early spring, filling the air with their perfume. Orange Blossom Honey is fragrant, delicate and perfect when spread on toast, waffles, pancakes and other breakfast breads. It makes a delicious topping for yogurt, ice cream and fruit salads. At Weil Farms, we take the time to separate our Orange Blossom Honeys by floral variety, giving you a greater choice of unusual honeys. Orange Blossom Honeys tastes sweeter than other honeys (and white sugar), so you don’t need much of it to sweeten your teas, coffees and other treats.

About Our Tropical Wild Honeys

Beneath the canopy of Florida's vast sub-tropical forests and pine woods, honey source plants grow in profusion, particularly Saw Palmetto, Tupelo, Wild Mangrove, Gallberry and Brazilian Pepper Bush. This acreage is not cultivated, fertilized or chemically sprayed, and the honey produced there is Tropical Wild Honey. This honey is bottled without filtration and cold processed to insure its full nutritional spectrum of natural pollens, enzymes and antioxidants. Tropical Wild Honey (indicated below with an *) is perfect in any recipe using honey.


 

Summer Wild Flower Honey*

A wonderful spicy amber honey with the taste of summer. Great for seasonal allergy control. Take a teaspoon three times a day. Honey helps get you to sleep at night.

Saw Palmetto Honey*

One hundred years ago, our area of Southwest Florida shipped the honey and berries of the Saw Palmetto to the capitals of Europe for their health-giving qualities. Today, Saw Palmetto is again chosen for prostate health, muscles and bones. This bright, distinctive honey is particularly good in desserts and teas and has a light natural cinnamon flavor.

NEW! Alfalfa Honey*

The purple blossoms of alfalfa plants result in honey with a light color, mild aroma and delicate flavor. Alfalfa honey can be slightly less sweet than clover honey. It is also less common than clover honey, as it is more difficult for bees to pollinate the alfalfa flower. Alfalfa honey is produced across Northern Florida. It is believed that Alfalfa honey helps to manage symptoms of PMS, digestive issues and kidney problems.

Tupelo Honey*

The 2015 crop of tupelo was the smallest in over 20 years. The 2016 crop was no better than last year’s. We all hope that next season’s crop will be a good one. We only have a small supply of Tupelo Honey so order early before we sell out! 

Tupelo Honey is one of the world’s rarest honeys. Produced along the Apalachicola River basin and surrounding swamps in Northwest Florida, the hives are floated in on rafts to pollinate the tupelo trees. Tupelo honey has a very smooth taste with a complex floral flavor with notes of sassafras. A favorite of singer Van Morrison, tupelo is naturally higher in simple sugars such as fructose, resulting in a honey that never granulates.

Brazilian Pepper Bush Honey*

A possible cure for poison ivy, this honey runs from light to dark depending on the season. A spicy, wild-flower taste with a slightly peppery finish. One of the best cooking honeys.

Gallberry Honey*

Gallberry, a true evergreen bush that grows along the Gulf Coast of Florida produces a unique thick, light amber honey with a pine aromatic flavor. A perfect table honey, it is also recommended by gourmet chiefs for baking. Gallberry Honey is known for its lack of granulation due to its high pollen and enzymes content and is therefore slow to crystallize.

Many of the farms we pollinate have large raspberry fields that produce a light honey with a great taste. Many honey lovers eat this honey straight out of the jar. It is also good in teas, on biscuits, or just plain toast! Many people can experience the actual taste of the raspberries in the honey.

Buckwheat Honey

Buckwheat honey is a medium to dark medicinal honey which comes from the bees pollinating buckwheat flowers. Several recent studies report that dark honeys tend to have higher antioxidant compounds than lighter ones. Further studies show it retards the growth of cancer cells.

We pollinate many orchards and farms in Connecticut. One of our specialties is the blueberry crop. Blueberry Honey has a medium honey color and an aroma reminiscent of green leaves with a touch of lemon and a moderate fruity flavor with a delicate aftertaste. Many people can experience the actual taste of Blueberries in the honey. Use it for breakfast on blueberry pancakes, French toast or waffles. Use it in an otherwise unflavored tea to enjoy the fruity sweetness, or simply as a spread on toast or biscuits.

New!  Honey Powder
Honey powder disolves instantly in hot beverages and is great in oatmeal, baked goods, hot and cold drinks. May be substituted one for one in powdered form in recipes to replace white sugar. If the recipe calls for a cup of liquid honey, just add a cup of powdered honey plus ¼ cup of water. Use about ¾ cup of honey powder when a full cup of sugar is called for. It has a 3-year shelf life. There are only 27 calories per ¼ oz., much less than white sugar. Our's is all natural and organic – a healthier alternative to white sugar or artificial sweeteners. The powder has the same health benefits as regular honey, including natural vitamins and anti-oxidants as well as helping to control some allergies.
